Merry Christmas

Today was a lovely, slow day. We had plans to walk around the city, but it ended up being a little too rainy for that. We managed to get in some nice walks during breaks in the rain. This afternoon, we decided to make Kimchi Soup for dinner, but didn't have all the ingredients, so this is what we ended up doing. Started with turkey stock and added fish sauce and tamari to make it tasty. Had lots of quite sour kimchi from the last batch. Used some of that and some extra kimchi liquid. We didn't have tofu, so we used some cooked cannellini beans. Since we didn't have pork belly, we made pork meatballs with LOTS of ginger, garlic, Jimmy Nardello peppers, and shallots. Then we added some mustard greens to bump up the vegetables and mellow the intensity. It was delicious! Just the right thing for a cold, rainy day. After dinner, we checked the weather, and it said light rain for the next hour. About halfway through our walk, a torrential downpour started, so we got soaked. The streets were rivers, the sidewalks were rivers, the gutters were full. IT WAS SO FUN. What a great day.
