Beet Kvass & Chive oil
Today, my social plans were dashed because my friend has a cold. That meant I had time to catch up on some cooking. I started beet kvass - it's a fermented, slightly fizzy drink that tastes great. Additionally, chives tend to spoil quickly, so I decided to make chive oil, which preserves their fresh taste. We also went on several long walks, enjoying the fabulously sunny, crisp day. Just cold enough to put apples in your cheeks, but the sun was warm enough to want to linger in the sunny spots. The birds were also out enjoying the day.
England is planning a sustainable forest city. Let's do this!

Black Phoebe (Sayornis nigricans) doesn't he have a nice hat?

Have a splendid few days before the new year. These days always feel special and thought-provoking.
Sending oodles of love,
