Maine Event: Day 72
We have been having wonderfully blustery weather with rain. Gusts blowing the giant trees around is rather dramatic. It looks like it will stop tonight and then we will get a couple of days of reprieve before the next storm arrives on Saturday. It is such a treat to walk around in the rain and wind. I have always liked to be out in a storm there is something very free and wild about it that I enjoy.
There are many things I will miss about Maine and the frequent rain is definitely up there. It is also remarkably beautiful and the people have a healthy dose of common sense and are mostly good-natured and good-willed humans. I really like their temperament.
Cooking class last night was good but it was hard to stay awake. Boiled down it was something like, eat lots of vegetables, all the colors of the rainbow, 2 cups of fruit per day, and also 3 cups of (non-starchy) vegetables. Then we focused on salads and garnishes in the cooking part of it. We were taught how to make Tartare Mayo, a Vegan Mayo/Aioli, Quinoa Tabouleh, and a few different kinds of mixed salads including the Chickpea one with tomato vinegarette that I made earlier last week. There were eight dishes all together that were cooked in a little over an hour. Professionals are um...just a wee bit faster than I am.
I'm definitely not getting enough sleep these days for a variety of reasons and am hopeful that we can regroup and catch up soon.

It's hard to catch the waving in the wind because trees are cats-like and they don't much care to have their pictures taken unless they give you permission and they are looking fetching.
